For the final Saturday of one of Western Australia’s most respected chefs’ residency at Willespie Estate, Melissa Palinkas is changing it up – a long lunch built entirely around WA producers.
Share plates from the paddocks, farmers’ markets and coastline of WA, cooked over the purpose-built asado and above-ground grill, in full view of the table. Build your table from what’s on offer. The wines are Willespie’s. The afternoon is yours.
WA Good Food Guide Chef of the Year in 2019, with her restaurant Young George recently awarded a second hat, Palinkas is known for bold, produce-driven cooking grounded in a nose-to-tail, root-to-shoot philosophy.
Melissa cooks with what’s good right now – pulled from the ground, picked off the trees, or landed on the boats that week. Sourced directly from WA growers, makers and fishers, and shaped by what the asado and grill are calling for.
